• 6 large potatoes
  • 1 egg
  • 1 kg plain flour


  1. Peel and boil potatoes.
  2. When cold mash and add beaten egg.
  3. Work in flour.
  4. Place on bench form into a ball.
  5. Roll to thickness of approx. 5cm.
  6. Cut lengths or 30 cm in strips.
  7. Again cut across approx; 10 cm.
  8. With back of a fork roll over each piece to form the gnocchi.
  9. Toss in flour.
  10. Place in fridge until ready to cook (boil).
  11. Place in salted boiling water.
  12. When gnocchi balls rise boil for 5 min.
  13. Drain and add sauce.
