- 6 large potatoes
- 1 egg
- 1 kg plain flour
- Peel and boil potatoes.
- When cold mash and add beaten egg.
- Work in flour.
- Place on bench form into a ball.
- Roll to thickness of approx. 5cm.
- Cut lengths or 30 cm in strips.
- Again cut across approx; 10 cm.
- With back of a fork roll over each piece to form the gnocchi.
- Toss in flour.
- Place in fridge until ready to cook (boil).
- Place in salted boiling water.
- When gnocchi balls rise boil for 5 min.
- Drain and add sauce.
